The challenge of sustainable shrimp farming is to adopt new technologies for the improvement of shrimp culture, in terms of waste nutrient recycling to reduce environmental impact through efficient food and nutrient residual management. However, few studies have analyzed the link between the use of technologies, such as bioflocs or microbiotic cultures with indicators of the physiological and nutritional status of cultured shrimp. The aim of this study was to assess the levels of residual nutrients, eco-efficiency, growth, survival, and physiological condition of Litopenaeus vannamei at different dietary protein levels in the presence of microorganisms that can assimilate residual nutrients, specifically nitrogen nutrients. Two experiments, consisting of hyper-intensive cultures of L. vannamei, were conducted at different dietary protein levels in the presence of microorganisms (microbiota) that can assimilate nitrogen nutrients under controlled laboratory conditions (experiment 1) and under commercial farming (experiment 2). Residual nitrogen nutrients allowed us to identify four stages of nutrient processing: heterotrophic ammonium assimilation, nitrite oxidation to nitrate, nitrification, and denitrification. However, the last phase was not detected in the laboratory because nitrites and nitrates accumulated to high levels and had to be controlled with water exchange. These phases varied with protein level and, at the farm level, varied with a transition procedure between nursery and grow-out phases. Eco-efficiency improved at low protein levels, with values of 19.8% in experiment 1 and 46.4% in experiment 2. In experiment 1, growth was significantly higher in systems with low water exchange and presence of microbiota, compared to the control without microbiota. Moreover, performance in terms of growth, survival, and food conversion rate was directly related to protein levels with the high water exchange treatment in experiment 1, whereas the best performance was obtained in both experiments at an intermediate protein level (30%) in low water exchange systems and the presence of microbiota [...]
