dc.descriptionLas plantas están expuestas a diferentes estreses bióticos y abióticos, los cuales a su vez inducen estrés oxidativo. La salinidad y la sequía son los factores abióticos más severos que limitan la productividad de las plantas. La salinidad interrumpe, restringe o acelera los procesos metabólicos normales, tal como la maduración y la senescencia, y siempre en un sentido negativo o adverso Entender el proceso de la maduración en frutos frescos cultivados bajo condiciones de salinidad es un prerrequisito para mejorar la calidad del fruto y su almacenamiento postcosecha. Por tal razón, el presente trabajo se enfoco en el estudió de la respuesta de las enzimas superóxido dismutasa (SOD) y la catalasa (CAT) en frutos de chile (Capsicum annuum L.) cv. Caballero al someter las plantas a estrés salino moderado en etapa de cosecha y postcosecha. En la primera etapa las plantas fueron expuestas en macetas durante 90 días a cinco tratamientos: control (agua potable; 1,3 dS•m-1), NaCl (2,8 y 4,0 dS•m-1) y agua de mar (2,8 y 4,0 dS•m-1). Los frutos fueron cosechados en etapa de maduración y se midió pigmentación a la madurez, número, largo, ancho, peso fresco, contenido mineral (Ca2+, Mg2+, K+, Mn2+, Na+ y Cl- ), proteínas, actividad de SOD y CAT, lipoperoxidación y ácido ascórbico. No hubo diferencias significativas en número de frutos, largo,ancho y peso fresco. Los tratamientos produjeron diferencias en pigmentación de los frutos en la madurez, cambiando al rojo en ambas fuentes salinas a 4,0 dS•m-1. Las proteínas solubles aumentaron en 2,8 dS•m-1, pero disminuyeron al aumentar la C.E. en ambas fuentes salinas. Los contenidos de Ca2+, Mg2+, K+, Mn2+ disminuyeron al incrementar la C.E., mientras Na+ y Cl- aumentaron en 4,0 dS•m-1 (NaCl). El ácido ascórbico aumentó ligeramente en 2,8 dS•m-1. El estrés salino incrementó la lipoperoxidación y la actividad de SOD y CAT siendo mayores en 4,0 dS•m-1, y la respuesta en 2,8 dS•m-1 en ambas fuentes de salinidad pareció mantener la homeostasis celular sin alterar la maduración. Se sugiere la posibilidad de utilizar las enzimas SOD y CAT como biomarcadores de maduración en frutos de chile bajo estrés salino, al mostrar una alta actividad en la maduración cuando se utilizó NaCl o agua de mar. dc.descriptionThe plants under different expositions to abiotic stress, load an oxidative stress. The drought and salinity are the main abiotic factors that affect the plant productivity. The salinity, irrupt, decreasing or limit the normal metabolic process, that us: maturation, senescence, and always in negative way. The understanding of maturity process in fresh fruit cultivate under salinity conditions, is a purpose to increase the fruit quality and improve the postharvest life conditions for a better consumption in the market respectively. A pot experiment was carried out with hot pepper (Capsicum annuum L.) cv. “Caballero” to investigate the response of the antioxidant enzymes superoxide dismutase (SOD) and catalase (CAT) in fruits of this species under moderate saline conditions at harvest and postharvest stages. In the first stage the hot pepper plants were exposed during 90 days to five treatments: I) control (potable water: 1.3 dS•m-1), II) NaCl (2.8 dS•m-1), III) NaCl (4.0 dS•m-1), IV) sea water (2.8 dS•m-1), and V) sea water (4.0 dS•m-1). The hot pepper fruits were collected in the ripening phase and the ripening pigmentation, number of fruits, length, width, fresh weight, mineral contents (Ca2+, Mg2+, K+, Mn2+, Na+ and Cl-), proteins, superoxide dismutase (SOD) and catalase (CAT) activity, lipoperoxidation and ascorbic acid were measured. The results showed that morphological variables number, length, width and fresh weight of fruits remained without statistical significant differences between treatments but stayed the same as, or slightly less than that of the control. Saline treatments caused differences in fruit ripening pigmentation, changing to red color at 4.0 dS•m-1 when NaCl or sea water were applied. Content of soluble proteins increased from the control to 2.0 dS•m-1 but decreased as electrical conductivity (EC) increased with NaCl or sea water. Calcium, magnesium, potassium and manganese content, decreased as CE increased, but sodium and chloride showed the contrary, being higher at 4.0 dS•m-1 with NaCl. Ascorbic acid remained unchanged between treatments, although slightly increased at 2.8 dS•m-1 (NaCl). Salt stress was found to increase lipoperoxidation, superoxide dismutase and catalase activities being higher at 4.0dS•m-1 when NaCl was used, but this enzymatic response in fruits at 2.8 dS•m-1 in both saline sources, seemed to have maintained the cellular homeostasis, without altering its ripening [...]
